    Your endocrine system is largely dependant on saturated fat for the production of hormones in order for your body to function properly; if you didn’t eat it you’d be dead. We are carnivores, omnivorism is a modern invention (agriculture).

    As I said before; there are no bad fats, there’s just overconsumption leading to unbalances causing various problems.

    Coconut oil is 92% animal fat. You just said that animal fat was bad in any amount, yet coconut oil is supposed to be a healthy fat.

    There’s no such thing as unhealthy fat*, the reason why some fats are getting a bad rep is because they are over-consumed in relation to other fats causing an imbalance and/or deficiency amongst the essential fatty acids.

    *Not counting trans fat, seeing as it doesn’t occur naturally (it’s man made).

    We finally got around to making this while vacationing in NC . While it has a different taste than “real” pasta, it was really good. We used half of the spaghetti squash with spaghetti sauce and the other half as a desert from a friend's recipe. The desert recipe was the squash, 2 TBSP of butter (we used the healthy stuff), 1 1/2 TBSP of brown sugar (we used Splenda brown sugar mix) and about a teaspoon of cinnamon all mixed well. It was even good the next day reheated for a minute or so in the microwave.

    We will definitely have this dinner “combo” again.
